Cosi, the chain localized in young, urban areas in the country, strikes me as the Starbucks of bistros. It’s got a sort of approachable chic to it, combined with a sense of taste and even an awareness of self, covering up a faceless corporation.
The question is, what industry (or what craft?) would you like to be the Starbucks of? And also, what would your name be?
